About us

Weaver Hollow is a brewery making slow and naturally fermented ales on an old creamery in the Catskill Mountains. We utilize the native mineral profile of our well water, along with a house mixed-culture—avoiding commercial yeast entirely—to produce beers that are truly reflective of the land around us. Inspired by old-world Wallonian farm ales, our beers are aged in French oak barrels and often feature a restrained tartness, but are ultimately dry, drinkable, and refreshing. We open our doors one day a month to provide bottles to-go, and hope to have a taproom open with regular hours this summer.
