Salmagundi vol. 1 - Salmagundi is our series of singular, blended, farmhouse ales. Each volume is unique, and never to be reapproximated. This first iteration features a barrel-fermented saison brewed with European barley and heavily hopped in the kettle with European hops, aged for over 6 months on the lees; as well as a rather delicate herb beer brewed with Kaffir lime leaves, hibiscus, and lemon verbena, which saw a brief fermentation in stainless before an extended stay in French oak.
